It was a fateful Wednesday evening.
Chef Mark and I planned on visiting Chef Jason at his new joint, Pokéology,
located at 5555 Morningside.
(In Rice Village)
Neither of us had made it to grand opening
and apparently Chef Jason was SLAMMED.
(The line during grand opening spilled out the bar and down Morningside!)
So we decided to drop in AFTER the madness,
and,
in the words of the great #BeastieBoys,
"Check-ch-check-check-check-ch-check it out
What-wha-what-what-what's it all about"
maybe not the rest of the chorus...
but yea didn't eat a whole lot that day
so I was getting lit off ferraris (campari x fernet)
so yea it was almost the whole chorus XD
It was a bit hard to find.
It was dark,
I was slightly tipsy,
the sidewalks in Rice Village aren't friendly.
(uneven due to trees wrecking the foundation and wanting to greet you)
But we found it!
Pokéology is a portion of Doc Holliday's, a bar, on MorningSide.
It has it's own dedicated bar in the space that contains it,
so never fear!
IT IS A FULL BAR.
Poké AND booze?
yea, not many of the new spots also have booze.
Just another perk.
I think between this particular visit
and when I came for a meal before superbowl~
#ArianFoster had been frequenting.
There is now a bowl named after our famous Texan.
He is a pretty big fan.
In addition to Pokéology being loved by a Texan player~
Jason has 8+ years of XP in sushi.
He is well known for plating.
And he knows how to properly wield a knife.
NO BS: he offers a quality bowl
not only in quality ingredients (fish AND rice: taste the rice: it's seasoned)
but also presentation.
oh and yea,
not many joints offer seasoned rice as a base.
(They also offer a spring mix base if you are avoiding rice)
If you want to #BuildYourOwn bowl
protein options are: #Tuna, #Salmon, #SpicyScallops, #SnowCrab
Poké is RAW
Please do not expect the fish to be cooked.
To be fair I haven't had a bowl with snowcrab, and I feel that will likely be a cooked option
but in general: Poké is raw slices of fish.

'...if you are going to a restaurant grand opening
and you frequent the place often
or are just trying it out~...'
and some of you may stop and think,
'Well, how can one attend a grand opening of a place that never opened?'
GRAND OPENING(?)
A lot of these Poké restaurants
started as pop ups.
I have been to Ono as a pop up
and had all sorts of notifications for Seaside and Pokéology
Now Pokéology and Ono have #brickandmortar locations.
Just wanted to clarify that one.
Also sometimes people test out batches with friends and family as a sample audience
to get feedback before finalizing recipes.
I remember *RANDOMLY* trying cupcakes one time
from a now famous confection shop in Houston
(when they were still being conceptualized)
whose name I will not disclose
because I was asked to remove that tidbit about sampling cupcakes from an online review.
(idk)
BTW the cupcakes were delicious.
BACK ON TASK!
There were many one star reviews
mostly due to the line that during Grand Opening.
*It wrapped outside the bar and spilled down Morningside*
I do acknowledge that a long wait in line does contribute to one's experience,
but if YOU and your crew, along with
EVERYONE ELSE and THEIR crew
all swarm a place
at #TheSameDamnTime (I like lyrics hashtags)
How can you expect fast service?
It's like you plus 80+ people and one cashier.
half probably don't know the menu options
the other half probably don't know Poké is (generally) raw.
and a third of the crowd likely modified orders.
(There is only like 8 of them- and SO MANY of You.)
This applies to
Grand Openings
Concession lines at Stadiums
Ordering from any bar during the #SuperBowl
#HelloKittyFoodTruck popups
(bc YOU KNOW you are waiting in line at that point)
Also IIIIF, by chance,
you received your food
LOVED it
but gave a one star.... #Damn.
Rough stuff man.
AND
If you KNOW you hate lines
then wait in one
and give a one star,
that is kinda shitty too.
Examples:
I generally HATE lines, so I don't wait in them.
It's a simple way to keep yourself in a better mood.
I went to an OnoPoke popup
and I waited for a WHILE
(A LOT of people showed up)
but I had set time for the event
really wanted to try them out
and wasn't in a hurry.
As far as my bowl went:
I generally prefer salmon as a protein choice if it's between tuna or salmon
BUT I didn't want to modify and complicate things
Plus the reason I prefer salmon over tuna is because
I like the way salmon tastes
BY ITSELF
so it makes more sense to get the Tuna Yuzuviche
especially when I LOOOOOOVE YUZU (probably WAY too much)
You definitely taste the yuzu
which made me beyond happy.
Also, Jason seasons his rice.
Something some Poké joints do not offer.
Presentation is also much better than other places.
But I feel most other places maybe presentation in the bowl isn't a primary focus.
Which isn't a bad thing, I am just saying: Presentation is a thing at Pokéology.
Poké in general
I feel is a very simple meal.
Simple in the way that it is protein, maybe some other garnishes, veggie or rice base.
Simple isn't always easy.
But there is beauty in simplicity.
Simple also doesn't mean, 'basic.'
Poké is definitely something I cannot do on my own.
I am terrible at cutting fish.
So much so that I quickly skipped over it in a video I made XD
I also suck at making sushi rice.
So I don't expect everyone to give me a beautiful bowl.
I do APPRECIATE a beautiful bowl though.
But I am not one to hate on a place for lack of presentation.
If I desire a pretty bowl: #PokéologyAllDay
Different Poké joints have different charms about them.
Some offer different
bases (cucumber at North Shore),
proteins (spicy tuna at Ono)
set ups (Pokii Eatery's subway/chipotle vibe ~ you go down a line choosing ingredients)
Poké is a healthy, quickish alternative to many options we have.
I am SO HAPPY there are many Poké restaurants spread around town.
Each Poké joint #Pokéstop ;) has their own special vibe and charms.
